3 day One to One Coach
“I had always been a terrible cook, I was never really interested in food, eating was just an everyday necessity. I had never learnt to cook, and always thought that because of my disability it would not be possible to learn to cook nice food. I cannot stand for long periods of time, but now I was at a time in my life I did not want to eat anything from animals anymore, no gluten, no lactose and no sugar!! I had been vegetarian for 21 years already, so letting go of the little bit of chicken, was no problem. Only my fish and my milk was difficult for me. The way I was cooking could never give me all the vitamins and minerals I needed, and a part from that nothing I made had a lot of flavour, so my vegetables alone where very boring, and I got fed up with it quite quickly.
Then I met the lovely Gilly, she told me that she is a trained chef and teaches many types of cooking classes, so I told her about my problem, she said she would love to teach me. A bit scared of what I would be able to do, I began on this new adventure… I stayed overnight for 3 days at Gilly and Sergio’s home and I quickly felt very welcome. The days started early with shopping for vegetables and learning about new one’s that I had never seen or tasted.! And then we cooked, until late in the evening!!
Gilly taught me about spices that would make the most simple food taste delicious, how to make basic sauces and build from this something more complicated. I was just amazed at how nice food could taste. Bulk cooking, so I can freeze a lot of food for the moments it’s not possible for me to cook. You would think that food without fish, milk, gluten and sugar would be very boring and tasteless but it’s not, not at all!! If you eat Gilly’s food, you will not miss meat or animal products.
It is of course also to do with her knowledge of food from all over the world. Gilly taught me to make lovely fruit shakes with seeds for in the morning that way you will have most of your vitamins and minerals for the day, giving you a good energetic start. We even made healthy junk food!! Burgers from olive paste, so nice. They were long days but so interesting and fun, we laughed a lot and the days just flew by. Of course at moments I sat down when I needed but then I was writing. Gilly was great that way.
I think for the first time in my life learning something like that I didn’t feel like I had a disability, even the way she had patience with me to learn how to cut properly was just amazing. With her love I learned that I can do much more than I always thought I would be able to do. A part from that with her enthusiasm which is contagious she showed me to find passion for food which I never would imagine I could get. I can only say I loved it!! Thank you, Gilly for that lovely experience, for being a great friend & teacher. Love light and a big hug.”
